El gdate binary de coreutils debería ser el programa gnu date:
$ gdate --version
date (GNU coreutils) 8.25

Si no tiene eso en la ruta, tal vez brew rm coreutils && brew install coreutils sería un lugar para comenzar así como también inspeccionar su $PATH
